Salmon Bites Avocado Maki Rolls
To make a perfect cone for your rolls, make sure that you grab the lower nearest corner of the sheet of nori and roll it away from you to create a cone shape. You can put a piece of rice on the inside corner after you roll the cone to seal the wrap. It seems to hold better than using a bit of water and doesn’t make your roll soggy.
Makes: 6 cones
- 3 cup rice vinegar (su)
- 1 tablespoon granulated sugar
- 1 teaspoon kosher salt
- 1 small piece of kombu
- 1 cup white sushi rice, cooked and cooled
- 6 nori sheets
- 1 avocado, halved, pitted, and diced
- ½ bunch of green onion, thinly sliced
- 1 pouch Dear North Savory Sea Kelp & Sesame Salmon Bites
Combine and heat vinegar, salt, kombu, and sugar in a non-reactive small saucepan. Gently fold in the heated vinegar mixture, known as the su to the cooling rice. Place a sheet of nori on the table. Add 2 tablespoons of rice to half of the nori sheet. Layer on 3 to 4 Salmon Bites and avocado in a vertical line centered on the rice. Roll into a cone. Sprinkle green onion onto the top of the cone and eat immediately.
