Salmon Bites & Strawberry Endive Boats with Cardamom Crème Fraiche
You can make this appetizer in the early spring just as strawberries start appearing in the markets. It’s best to mix the strawberries and use immediately.

Ingredients
Strawberry & Salmon Bites Filling
  • 20 ounces fresh strawberries, hulled and thinly sliced
  • ½ teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon granulated sugar
  • 1 teaspoon red wine vinegar
  • 1 package Dear North Salted Rhubarb & Raspberries Salmon Bites
Cardamom Crème Fraiche
  • 4 ounces crème fraiche
  • ½ teaspoon ground cinnamon
  • ½ teaspoon kosher salt
  • ½ teaspoon granulated sugar
  • 1 Belgian endive, cored and separated into single leaves
  • 5 fresh basil leaves, thinly cut
Make the strawberry and Salmon Bites filling: combine the strawberries, salt, pepper, sugar, and vinegar in a mixing bowl. Toss the strawberries into the vinegar until coated. Gently fold in the Salmon Bites.
Make the cardamom crème fraiche: combine the crème fraiche, cardamom, salt, and sugar in a small bowl.
Assemble the endive boats: scoop about one tablespoon of the strawberry and Salmon Bites filling onto each endive leaf. Add a ¼ teaspoon dollop of cardamom crème fraiche on top. Garnish with basil. Serve immediately.
